As a big fan of Japanese food, I remember eating a delicious batayaki at Hanzo’s restaurant in Monterrico. I also tried the unique, refreshing menthol taste of purple shiso basil over that restaurant. Little did I know that the name “Ache” came from Hajime’s initials.

The menu is full of umami flavors, and the presentation was designed to make sure we could shoot the complete menu in a pair of days. The stoneware and stylish pottery were our canvas, showing off all the different kinds of nigiri and maki they had.
