The emblematic chef from northern Peru commissioned us for a dream project. After seeing us complete Acurio’s work and burst the networks with the new image, he asked us to pay tribute to his kitchen and the three generations of his family that spread it.

We organized this history with the help of the locals archaeologists, who found a strong Moche legacy in the kitchen of the North. In this trip with journalist Sergio Rebaza we met archeologist Ignacio Alva, who showed us the oldest mural in America in the remains of the Huaca Ventarron.

The Moches weren’t subdued by the Inka. Before the expansion of Tahuantinsuyo, the populations of the North were assumed by the Inka empire since their cities functioned as great salters of fish and producers of chicha de jora.

Each Moche drawing reminds us of their deep reverence for food and their possible role as the region’s first great cooks. Local communities domesticated crucial ingredients like the duck thousands of years ago, taking advantage of the forced rest that created the lagoons left by Fenomeno del Niño.
