Aníbal Criollo, a Quillacinga and proud guardian of his culture, creates pickles from tubers and vibrant flowers found in the wetlands that form the basis of his cuisine. Inspired by the Shagra, an ancestral concept of self-sufficiency working in community, his unique Andean gastronomy reflects a century of colonial miscegenation.

La Cocha Lagoon, the second largest glacial aquatic mass in Colombia, is an unparalleled ecosystem situated at 2,700 meters above sea level in Pasto, Nariño. This lagoon is home to the Quillacingas, a local ethnic group that has protected the territory for millennia and shares it with the rainbow trout introduced in the 20th century as a source of food and labor.

Each seed, vegetable, and animal that emerges from Anibal’s Shagra plays a vital role in its diversity, offering the cook an unparalleled array of regional flavors that captivate both local and international diners. Preservation is paramount within the ice calendar; the family that accompanies it diligently rescues smoking and salting processes to endure the winter.

Criollo, a cook deeply aware of his era, even prepares meals over European cuisine for significant events such as Madrid Fusion and other culinary festivals. Seeking to dignify and disseminate these recipes, which were passed down orally through generations of his family, he shares his curatorship, compiling them into this book.

In 2025, Marcela Criollo, Anibal’s cousin and sous chef, tragically passed away in a crash accident. Consequently, our work is to continue supporting Criollo’s family, who have lost their beloved girl. We miss her dearly.
