Martha Quintero was the boss of a big international advertising agency in Cali. I met her just as she was leaving the city and heading to Dapa, a mountain range that closes the north side of the Cauca Valley.

Like some of us, she was tired of the city and wanted to try something new. I met Leo, her partner, on a field trip to Nazareth in the Wayuu territory of Colombia’s Guajira. This guy manages a fairy tale finca in the mountains where his mother started smoking and curing pork, and of course, ended up making one of the best chorizos you’ll ever try in the region.

With all in-house, both started Café de las Hadas in the middle of Dapa. Everything they cook comes from their own crops, and their processes are handmade every day. Starting with cheese and charcuterie are part of their products, and they’ve developed “Los Duques” as a label for the Christmas’s curated meats and sausages they eat in December.

Dapa is full of trees, and Leo works with wood. He has almost built every chair and table in the café. But his most impressive construction is the smoking house where he processes hundreds of sausages every two days.
