Residing in Colombia for the past decade, I have witnessed the country’s vibrant green landscapes. Recently, I was fortunate to be invited by a prominent production crew led by the story directors responsible for filming a television spot for the COP16 convention in 2024 in the valley.

The gardens of the international Palmira seed bank, known as CIAT, were transformed into a culinary banquet. Circular tables, each accommodating 12 people, were strategically placed in the gardens. The local culinary team was led by Chef Catalina Vélez, the first Colombian to work with the origins and ancestral processes of local cuisine.

Creative chefs such as Javier Rodrigues from Cartagena’s Celele restaurant contributed with desserts to the banquet, adding a touch of culinary innovation to the menu. All the interns from the Javeriana University cooking school helped during this week developing mise en place for the hard days. 

After a series of events with Latin American non-governmental organizations and the collaboration with South African chefs, the arduous days came to an end. Cali returned to normalcy, with all hotels and Airbnbs free again.
