First time we went over was an invitation that Soledad from Diageo made to us for helping him register some of the new dishes on the menu. First time working with Virginia and Emperatriz as sous-in charge. And also to visit to supervise some cocktail pics Diago’s Latam ambassador Bruno Ferrari came over. A complete fiesta. 

We visited Fiesta again for the last double page banquets, after almost finishing Solis book Hector’s team had already organized the mise en place, and over 20 dishes were served. Chacon, the oldest maitre, quickly set the principal salon with “the imperial table,” four gigantic ones together. As he said many presidents have enjoyed their food in this imperial sets.

Fiesta is one of the oldest restaurants in Lima, probably the first that dignifies the northern cuisine of the Mochicas, one of the most impressive precolombian cultures of America. Imagine a 16 pax table with all the creatures that could satiate a Moche king and his court.

Arianne Marie helped us visualize it from the top structure of the salon. Chacon completed details with his iron, erasing the last lines over his white tablecloth. Distributing over 20 dishes, including complete ducks, goats, and gigantic grouper heads, wasn’t easy and Pocho Caceres was anxious to start shooting. 

Hector was impressed with the impeccable photos we made. He invited me and Arianne back a month later with the visit of Venezuelan photographer Gilbert Franco. This time, new beautiful dishes designed by Arianne and fabric by the interns of Castro Castro prison were the props used. Natural light gave us some of my favorite pics in a while.
