The second meeting was in his penultimate restaurant, an honest tribute to Italian-Mediterranean cuisine named Rocco after the porn actor. He arrived early to inform us that he was unwell and that Rodrigo Alzomora, the chef in charge, would accompany us until sunset.

Rodrigo, a talented and experienced chef from Lima, surprised us in every way, unstoppable he got every product they used to get registered by our cameras.

Flours, doughs, and processes were made daily by a small army that produced fillings, cheeses, and sauces for ravioli and cappellettis. The inputs were the stars, and presenting them on the red chairs was a cool idea.

Pocho, after mastering zenital composition and creating abundant banquets, found a delicious challenge in assembling the most extravagant feast, reminiscent of the Beagers’ banquet. The compilation of all this food in one table was exquisite.

A few days later, Rafael’s motorcycle accident postponed the third and final meeting. Two months later, @papaeperu warned us that Rafael’s partition was crucial and that he needed to see his catalog of bottles displayed in his restaurant. This was the time for Pernod to shine. 

The third round in Miraflores would be memorable. Osterling, with crutches, deployed all the restaurant’s products and supplies in minutes, registering over 20 dishes and 10 cocktails with Alzamora in less than a day. By lunch we were all already seated, eating what we had photographed convinced that his esthetics were his sign.
